BB: Grown Up Mac and Cheese

Welcome to another addition of Barefoot Bloggers! This week our selection was Grown Up Mac and Cheese chosen by...me! It was my turn to pick one of Ina's delicious recipes and I decided to go with her very interesting looking Grown Up Mac and Cheese. I loooove mac and cheese and thought this was a great recipe to make it a little more... mature. It has 3 different kinds of cheese, gruyere, cheddar, and blue cheese. Tasty no?

Well, I thought it was going to be tasty. All I could taste was blue cheese. Now I like blue cheese just fine...I just didn't want to taste only that. Gruyere and cheddar are two of my favorite cheeses. I also had trouble with the sauce. It never thickened up properly.

When I re-heated this, I added more gruyere too it and that toned down the blue cheese somewhat. If I was to make this again, I would definitely hold back some on the blue cheese or perhaps leave it off all together and substituting some other cheese. Despite my not so enthusiastic response to it, I think its a great idea to make mac and cheese more adult. Sometimes we get to used to the blue box and need something different.

Sorry for the short post. I had an accident this past Sunday. The vacuum decided to take me down. I know it sounds weird. I was attempting to do some cleaning and on my way back to the bedroom from the bathroom, my pinkie toe hit the vacuum and down I went. I thought I just bruised it and perhaps a slight sprain. Nope...the bruise kept getting bigger and deeper so off to the minor emergency clinic I went. Turns out its fractured. Now I've got to wear one of those boot things until I can get an appointment with a specialist to 'confirm' that its fractured and not broken. Its going to be fun walking up and down 3 flights of stairs with that thing on everyday.

Grown Up Mac and Cheese

4 ounces thick-sliced bacon
Vegetable oil
Kosher salt
2 cups elbow macaroni or cavatappi
1 1/2 cups milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
4 ounces Gruyere cheese, grated
3 ounces extra-sharp Cheddar, grated
2 ounces blue cheese, such as Roquefort, crumbled
1/4 teaspoon freshly ground black pepper
Pinch nutmeg
2 slices white sandwich bread, crusts removed
2 tablespoons freshly chopped basil leaves

Preheat the oven to 400 degrees F.

Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon is crisp. Remove the pan carefully from the oven - there will be hot grease in the pan! Transfer the bacon to a plate lined with paper towels and crumble when it is cool enough to handle.

Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.

Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt the butter in a medium pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or 2 more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, blue cheese, 1 teaspoon salt, pepper, and nutmeg. Add the cooked macaroni and crumbled bacon and stir well. Pour into 2 individual size gratin dishes.

Place the bread slices in a food processor fitted with a steel blade and pulse until you have coarse crumbs. Add the basil and pulse to combine. Sprinkle the bread crumb mixture over the top of the pasta. Bake for 35 to 40 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

You know its funny - I had the same Blue Cheese issue. For some reason, it did not occur to me to increase the amount of one of the other cheeses in the left-overs...

We resorted to the tried-and-true tactics I always used as a kid.

Ketchup. Lots and lots of ketchup.

Not that it helped, tee-hee.

Oh! And you take such lovely photos, by the by!

Sorry to hear about your toe! Ouch. You think "oh no big deal, it's just a broken or stubbed toe" right? But sometimes those things, kicking a chair or hitting a step with your toe, will make the best of us crumble and weep.

I liked the recipe, thanks for choosing it! However, going into it, I hacked the recipe to suit my own purposes (a month of larder cleaning) and used a Gorgonzola cheese spread, intead of all the bleu cheese. It had a really nice tang to it, I could taste it, but it wasn't the dominant flavor that way.

You and your poor toe - I hope it gets better quickly. I loved your recipe choice, but used gorgonzola instead of roquefort, which might be a less powerful blue. All I know is it was delicious. Thanks!

Yea! to seeing Charlie back. I think I used a milder blue cheese as it wasn't overpowering. Sorry you didn't love it--I thought it was a great pick.

I find you have to be so careful about choosing blue cheese...some varieties can be so stinky. Great recipe choice! Sorry about yur toe!

Sorry you didn't love it! I subbed the blue cheese with whatever I had in the fridge and I think that is why we loved it so much. It looks good- Thanks for a wonderful choice!

Ouch, sorry to hear about your toe. Thanks for the great recipe. We loved this! My sauce didn't seem that thick at first either, but was fine after baking. Blue cheese can definitely have bite, it's too bad yours was so strong. Love the cute dog!

Welcome back, Charlie. I can't believe that an innocent vacuum could be the cause of such suffering. Although, I remember I had a friend in college who broke her arm while vacuuming and dancing at the same time. Dangerous business, this keeping the house clean stuff. Now for your mac and cheese, it looks wonderful. I've heard quite a few people say the blue cheese was a little overpowering. I used parm, but I do love blue in my mac anc cheese, but only just an ounce or two. Good luck with your quest for a boot and may you heal quickly. And keep the house messy; you'll live longer.

I also thought it wasn't as tasty as it should have been. I think next time I'll add more cheese and make nearly double the sauce. I also think spicy Italian sausage crumbles would add a little more flavor to it, rather than the bacon.
I agree though - as it is, not my favorite mac and cheese. But I think if I play around with it I can get it there. It's a great basic recipe to start with.

Ouch I bet your toe really hurts. My hubby dropped a 48 in round glass top on his foot and broke his pinkie toe and a couple of others he had to wear what we call the franken boot for a month! Not fun! Wanted to thank you for your wonderful choice it was a huge hit in my house!

I'm so sorry about your vacuuming accident!! That is the worst housekeeping-related accident I've heard of since an iron fell out of the closet onto my sister's head in college (she' fine). Thanks for picking this recipe! I, too, was overwhelmed by the blue cheese, but I love the idea of experimenting with mac & cheese a bit, and I would make this again, either with less blue or something other than blue. Your mac & cheese looks beautiful!

I substituted feta for the blue cheese and thought it worked really well with the gruyere and cheddar. Good luck with your foot. What a pain - literally!

I happened upon your site randomly, so don't worry about replying to this comment. I just wanted to let you know that if you're looking for a really decadent grown-up mac n cheese recipe and this one didn't do it for you, check out Martha Stewart's website and do a search there. I have a MNC recipe of hers that I've used for years now and it's familiar comfort food, but all grown up. Best of all, kids like it too, whereas the blue cheese in this recipe would probably turn off most kids. Happy casseroling!
