TWD: Cranberry Orange Biscotti
Its' BACK!!!!! Yes, the Dorie Mojo came back this week! You can imagine the dance of joy that Charlie had to witness in the kitchen on Sunday. He was really confused. ;)
For this weeks Tuesday with Dorie, Gretchen of Canela & Comino chose Lenox Almond Biscotti (pg 141-143). I love biscotti but have never attempted to make it at home. It didn't seem to be very hard so I was eager to give it a try.
Dorie calls for almond extract and sliced almonds for her biscotti but I had neither so I went for the options that she had listed. I love dried cranberries in just about everything and orange flavor is just classic with cranberries so it was a no brainer for me. I also went with my homemade vanilla extract (instead of the almond.
I made half of a batch because as much as I love biscotti and baked goods in general, I can only eat so much. I know I could take these to work but honestly, I didn't want to share these. They were so good! I was surprised about the use of the cornmeal but it wasn't overwhelming and added a nice crunch. The cranberries were tart and sweet at the same time. A perfect compliment to the subtle citrus flavor from the orange zest.
I will definitely be making these tasty cookies again. The flavor possibilities seem endless. I wonder what a matcha flavored one would taste like? hmmm...I think that one will be next!

They look delicious. Hey, I have a kitchen tape measure that lives in one of utility drawers; it's covered with flour because I use it all the time.

I hope you like the silicone mat! My friend gave me one a while back and since I've bought three more on ebay (only about 7 bucks for a silpat!) I figure over the long term you save the money on the greasing, right? :)

Ooooh, look at how pretty your biscotti are - so nice and tall and smooth. Not to mention the scrumptious flavor combination. Great job. I totally measured my logs also! I found some silicone mats at Marshall's - I like them better than parchment.
