Four Star Chocolate Bread Pudding

You would think that because I made this nearly two weeks ago, I would have written up the post ahead of time. But noooooo. Not me! I'm stuck in a never ending cycle of packing at the moment so doing something ahead of time sort of gets forgotten about. Perhaps if I actually knew where I was going to live beyond crashing with my aunt for awhile, I would have gotten around to writing about this delicious bread pudding on time. Oh...did I forget to mention that I don't have a house anymore?

Yeah...we had some uh...issues...with that one and had to let it go. I had already given my 30 day notice on my apartment however, and wouldn't you know...my lovely complex had already leased out my apartment for May. So I spent last Saturday with my mom and aunt looking at a whole 'nother set of condos and townhouses. We decided on two and put offers in on both. So far one has been turned down and the other (the one I like better) has been no response. Well...if it wasn't for my aunt, me and the dog would be out on the street (and the cat and guinea pig too. Speaking of guinea pig...anyone want one...his name is Cadbury!!!). Mostly likely making a house out of all of the boxes. Hopefully we'll get a response soon on the other. If not, I'm probably going apartment hunting!

Enough of all of that drama! Let's get to the bread pudding. I was a bit skeptical of adding chocolate to bread pudding. I've had and baked all manner of bread pudding but not one of them had chocolate. It seemed odd at first but I love bread pudding (something about the mushiness of the bread makes me love it) so I jumped in and made it. This was one of the easiest bread puddings I've ever made. Just a few minutes and its soaking up all of the custardy goodness. A quick bake in the oven and BAM! a nice tasty dessert is on the table.

The hardest part is letting it get to room temperature. I snuck a tiny piece and it was so good warm. I was hoping it didn't go all yucky once cool. OMG....this stuff was sooooo unbelievably delicious! I only made a 1/3 of a batch and it was gone in about 2 eatings of it (I managed a small third for breakfast). I don't think I've been that disappointed in a long time. If I hadn't been out of bread and most of my kitchen packed up at that point, I would have made another batch up. Sadly, it didn't happen. But as soon as I have a working kitchen, you can bet that baby is getting whipped up again!

Sorry for the late, kinda whiny post. Some day when I have that said working kitchen, I'll be back on a more regular, less whiny basis!

Skeptical about adding chocolate to bread pudding? Girl, I'd add chocolate to almost anything except oatmeal!
